Pickled Red Onions

Ingredients
  • 3 large red onions, sliced thin
  • 1 cup cider vinegar
  • ½ cup water
  • 2 tbsp sugar
  • 1½ tsp fine salt
  • 1 tsp black peppercorns
  • 2 bay leaves
  • 1 tsp dried oregano
Method
  1. Put the sliced onion in a heatproof bowl and pour boiling water over it. Count to ten, then drain.
  2. That scald is what turns them from raw and harsh to sweet, and it sets the pink.
  3. Warm the vinegar, water, sugar and salt until dissolved.
  4. Pack the onion into jars with the peppercorns, bay and oregano and pour the hot brine over.
  5. Cool, then refrigerate. Good in an hour, better the next day, keeps a month.

Sixty-eight of the eighty say how long it keepsA preserving book that does not tell you when to throw something away is not a preserving book. Each recipe carries the keeping time in the method, in the fridge or on the shelf, and says which.
Salt and sugar by percentage, not by cupA 2% brine works on any weight of cabbage and a cup of salt works on none. The ferments and cures are given as a percentage of what you actually bought, which is the only form that scales.
Nothing here needs a pressure cannerEvery recipe is safe by acid, salt, sugar or cold, and the book says which one is doing the work. Low-acid canning is left out rather than fudged, because it is the one place where getting it wrong is dangerous rather than disappointing.
